For a tea party with a difference, serve up these tea cocktail recipes in tea sets. Pair up with complementary cakes for the finishing touch
EARL GREY & ELDERFLOWER MARTEANI
The classic gin martini is given a high tea twist
RECIPE
A double measure (50ml) of gin
A double measure (50ml) of strong Earl Grey tea, chilled
1 egg white
1 tablespoon lemon juice
2 tsp elderflower liqueur or cordial
2 tsp sugar syrup
Handful of ice cubes
Lemon slices to garnish
METHOD
Put all of the ingredients, except the lemon garnish, into a cocktail shaker.
Shake well and strain into a teapot, and serve into individual teacups decorated with a lemon garnish.

TROPICAL CHAI TAI
Enjoy a spicy new take on the Mai Tai
RECIPE
Double measure (50ml) strong chai tea, chilled
Double measure (50ml) spiced dark rum
1 tbsp almond syrup or orgeat
Juice of half a lime
Orange juice to top up
Maraschino cherries to garnish
METHOD
In a cocktail shaker, combine the chai, rum, almond or orgeat syrup and lime juice.
Place ice cubes into mismatched teacups and pour mai tai chai into each, topping up with pineapple juice – garnish with a maraschino cherry.

GREEN TEA MOJITO
This tea-jito pairs fresh mint leaves with smooth green tea
RECIPE
2tsp brown sugar
2 lime quarters
A sprig of fresh mint
Double measure (50ml) white rum
75ml strong green tea, chilled
Crushed ice
Another sprig of mint to garnish
METHOD
Muddle the sugar, lime quarters and mint at the bottom of a mug. Add a little crushed ice, and pour over the green tea and white rum.
Garnish with a mint sprig.
